Our Story

 

Baja Chimayó is the newest addition to the Chimayo brand; a sister store to Chimayo Grill in Dillon, Colorado.

 

Chimayo Grill is a locally-owned and operated fast-casual restaurant that has been slinging tacos and burritos since 1998 when the doors first opened. Not a chain, although there have been a couple of other locations in Summit and Eagle Counties that have since been sold and operating under new concepts before new ownership came into play in 2008. 

In 2008, Chimayo Grill was acquired by a long-time Summit County local couple. The duo kept up with Chimayo's scratch-kitchen mission. For example, their popular Baja Fish and Baja Shrimp are hand-breaded to order, not frozen and pre-battered. The Chimayo crew is skilled in chopping, prepping, cooking and they do so from raw to serve. 

Baja Chimayó opened in Silverthorne, Colorado's Bluebird Market Hall in January of 2022. This location offers the same signature dishes along with a rotating menu of a variety of tacos, burritos, and desserts not usually offered at Chimayo Grill. The location at the Bluebird Market Hall allows Baja Chimayó to use the space as a test kitchen and to further explore into the cuisine. 

 

Both Chimayos continue to be Summit's favorite go-to for 'on-the-fly' epic Fish and Shrimp Tacos, signature Chile Rellenos, burritos, quesadillas, fajitas, nachos, and more. 

For a little more information...

Chimayó is a rare, native chile grown in CHIMAYÓ New Mexico (approx. a five-hour drive from Summit County) and has been for over 400 years.

In a nutshell, a Chimayó pepper is only considered a Chimayó pepper when it’s grown in the dirt in Chimayó, NM. The dirt purportedly holds healing powers.

Many of Chimayo's recipes are prepared and cooked with Chimayó Chile Peppers.
